Coconut Lemon Bars

A lemony dessert or snack.

Ingredients

Directions

  1. In a bowl combine flour and powdered sugar, cut in the butter until crumbly.
  2. Press into a lightly greased 13x9x2" baking pan. Bake at 350 °F (175 °C) for 15 minutes.
  3. Meanwhile, in a mixing bowl beat the eggs, sugar, lemon juice and baking powder until well mixed.
  4. Pour over crust. sprinkle coconut evenly over the top.
  5. Bake at 350º F for 20-25 minutes or until golden brown.
  6. Cool on a wire rack. Cut into bars.

I tried this tonight but the filling did not rise. The lemon part was thinner than the crust. It tasted delicious though. Also don't put the coconut on top right away. I did and it sunk to the bottom.
