Chicken Tostadas

A very fresh idea for a snack or meal.

Ingredients

Directions

  1. Spread the tostada with a tablespoon of smashed beans.
  2. Cover tostada with lettuce, chicken, salsa, a tablespoon of sour cream, onion and avocado.
  3. Spread all over with the Mexican blend cheese, salt and enjoy.

Firm tofu or tempeh with ground cumin, chili powder,salt, pepper and lime squeeze for vegetarian optoins. Julienne jicama, carrots, and purple cabbage cilantro. Make a great vegetarian option.

i made this tonight...it turned out great!!i also put ckn breast in a crock pot for a few hours and poured reduced sodium taco seasoning and about half a cup of salsa.also added one onion,red bell pepper and a green!!all my kids loved it!!but we love our mexican food!!lol!!

I enjoyed the chicken instead of my regular toastadas with hamb. My husband liked it too. I will make this again.

This actually sounds and looks great. I would change a little bit to make it fit in my calories range but lots of possibilities thanks for sharing.

This receipe says Induction for Atkins. No it isn't you are not to eat grains until you are in the OWL and even then not these corn tostadas.

Tostadas have been a staple at my house for years - I actually make them with non-fat refried beans (rosarita brand) and no meat. We spread the beans, then lettuce, tomatoes, cheese & guacamole (homemade). I will try them with the chicken, though. Yummy and my kids love them!
