I've almost lost the weight from the pistachios (and piece of apple pie). Won't lose a pound this week unless it happens today.

The plan is to make egg salad today with 2 eggs. Hopefully one piece of bread will be enough. I bought a dozen eggs the first week of October and threw out 10 of them. So when I bought another dozen this week I immediately boiled 4 of them. Hopefully I'll use the rest of them. I may an apple walnut cake for the holidays and I think I need 3 eggs for that. And I may use one in a meatloaf or tuna casserole. I hate wasting eggs but rarely eat them. Although they are a good source of protein and I am always working hard to get 40-60 grams a day.

We all have our own risk tolerance level, but I've eaten eggs pretty far past the expiration date...

Thanks Writing! I usually keeps eggs quite awhile and font pay much attention to the expiration date.. 2 months must seemed like too long!

I was curious how long you should store eggs, so I went to trusty Google 😊 3 weeks is the recommended time. Something I never thought of is you can crack them & freeze them.

We are on same page. I made egg salad for lunch. Made with Greek yogurt instead of mayo and had it on a low carb tortilla. Very good. Yesterday and today have been good food days!

BTW, you got me thinking about roasts the other day and I remembered I had one in my freezer. We went to a RV fair so I did the carrot, onion, potato chuck roast in crockpot. House smelled heavenly when we got home. Thanks for idea!🩷🩷

You can test by gently dropping egg into a tumbler glass of cold water, at least 4-6 oz, If it floats, it's bad. (Gases have built up.) If it sinks, it's fine.

Thanks JDE, I don't use protein powder. My doctor wants to avoid processed foods and when I asked him about protein powder he said it is processed. I don't do everything he wants although I try!

Thanks Sherry! I looked it up on Google too and found different information. One place said 4-5 weeks after expiration. Another says 3. Can't imagine freezing an egg!

Thank Diana! I actually used 3 small s!ices of oatnut bread! I didn't realize 2 eggs made enough egg salad for 2 days and I was so hungry! It was around 11am and my last meal of the day. I try to have a mac if 100 carb grams but usually end up around 130.

Diana, I had leftover roast yesterday and it made me want to cook the 2nd one. I marinated the roasts in red wine before freezing and have had an ounce or 2 of wine a couple of times trying to finish the bottle! I'm not a big wine drinker. Hope you enjoy your roast!

I think if you want to scramble them or use them for cooking it might work. It might work for you to freeze some when you buy them, since you say you don't eat them fast enough.

I boil half a dozen at a time and add a couple to my lunch salad.
