I'm still managing to lose 1 pound a week although I'm anxious about it all week. I decided to make a chuck roast for today, after posting my weight. I don't eat much red meat but I tend to make actual meals during the cold and rainy season. I usually make a roast twice a year. Will also make chicken stew, chicken and vegetable soup, meatloaf and chili during the next couple of months. I had no idea now much fat is in the roast! Not good for someone who really should be following a low fat diet.I won't tell my doctor about the roast! Meanwhile my at Marco (20 pounds and diabetic) has figured out there is more food to get excited about than tuna fish in the kitchen, although I still have to prove to him that I opened a can of mandarin oranges, not a an of tuna. But with a rotisserie chicken and today's roast he is just staying in the kitchen.Same with my white cat,Tony and Bobby my dog. The 3rd cat, Fritzy has very little interest in people food.

That is very impressive. I am not sure how you prepare roast or what cut you are using but some fat will cook out of it and leave the lean stuff

Thanks Liv. I think the chuck roast is the fattest cut for a roast and the most popular for a pot roast. I cooked it overnight in the clock pot. The this morning I added carrots and potatoes so they would get too mushy. I've skimmed some fat off the gravy, made with cream of mushroom soup added to the crock pot last night. I had a serving around 9:30 and may have a small serving around 2pm to finish my eating for the day. I may save a serving for tomorrow and then freeze the rest. I'm already getting tired of it!

I pour the gravy into a tall, narrow container and chill it in the refrigerator, then lift the hardened fat off of it. Works great.

Thanks Liv! It is good. When I was growing up we had this roast every Sunday.. I listed the total of what I ate as one meal but actually had a serving around 9am and then again st 2pm. No more eating today. I enjoyed it but will likely freeze the leftovers for another day. I am just not used to eating heavy meals anymore. Maybe I ate too much, I always try to stop eating before I get full. I like being just satisfied. I think I will make an Asian chicken salad tomorrow. Need to thaw the chicken!
