This is a new recipe for meat loaf that I tried in my instant pot tonight. My youngest said it's the best meat loaf hes ever had.

It was 2.25 lbs, so I cooked it for 27 min. If you have Pinterest, you can find the recipe pinned to my Instant Pot board. Jist look for Jo Sprouse. Otherwise, I'll post the recipe tomorrow..heading to bed now 😊

Instant Pot is a multi function pressure cooker. Saves a lot of time and you can cook an entire meal in one pot! You can throw a frozen piece of meat in there and it's done in no time! The potatoes are actually new red potatoes. They are the color they are because I put beef stock in as the liquid and also the juices from the meatloaf flowed into them, which just added to their flavor!

I love my pressure cooker too, can cook beans, chick peas and lentils without soaking.. must be stainless steel though, aluminum ones are for canning not for cooking:)

@SquirrelB It took me a while to finally bite the bullet and get mine..and I'm still learning, but it is so worth it! I am in a group on FB for IP users and I find a lot of recipes on Pinterest. I've already made lasagna in it, which was a huge hit. I've done a couple of roasts, beef stew, chicken and now the meatloaf. I'm actually considering getting a smaller 3 qt IP for small side dishes (I have the 8 qt now) so I can have both going at the same time when cooking veggies that don't take as long.

The 8 qt is what I was considering. I'm just cooking for one, but I like cooking ahead. Have a couple meals now & freeze some for later. What brand did you get?

I went ahead and got the name brand Instant Pot, mainly because some of the reviews for the other brands weren't that great. The 8 qt is huge! You'd probably be ok with the 6 qt if it's just you. It would still make enough for several servings. I've got 2 teenage boys, so I have to cook larger portions and of course, you can't fill the pot to full capacity. I get use of about 6 qts or so with mine. The 6 qt would be around 4 to 5 qts of usable space.
