Made waffles today using CarbQuick (a BisQuick substitute). You could tell they were not the real thing but they were darn close. In addition to using the CarbQuick mix, I used Stevia packets for the sugar, I used unsweetened coconut milk for the heavy cream, I used coconut oil as the vegetable oil, and I used Maple Valley Farms sugar free pancake syrup (15 calories for a quarter cup). I used real butter. The only issue I had was that mixing the coconut oil into the batter did not adequately keep them from sticking to the waffle iron. Need to work on that aspect of it. But otherwise, I had a full serving (the recipe makes about one and a half full size waffles [six of the smaller squares]) with very few calories and carbs. And, as a bonus, the fiber count of that CarbQuick stuff is off the chart! I'm going to try some cheddar biscuits to go with some beef bourguignon that Denise is making for dinner. Report to come!

You will like those cheddar biscuits. LOL! They are light and delicate. Good luck on the recipes. :o)

I have started using a flour made from Teff, it has 6 grams of protein. The biscuits are a little dense but yummy.

Just remember low carb doesn't mean eat all you want. LMAO!!!!!!! I knew you would love the cheese biscuits. I used to eat one and my hubby would eat about three. I only made half the recipe for us, though, so there weren't more sitting around.
