A friend who has been undergoing cancer treatment called this afternoon and reported that she is now cancer free. A bunch of us girls got our stuff together, went out for pizza (2 1/2 pieces), a 16 ounce bottle of Dr. Pepper, and two scoops of Baskin Robin’s ice cream (lemon custard and rocky road) and I am stuffed beyond words. She wasn’t allowed to eat those things during treatment and she swore that when she finally got the green light we were all going out and OD on pizza and ice cream. this is not my thing at all but in the spirit of her exuberance, we all did her proud. Now I will probably be up all night with a stomach ache and or puking but it will be worth it just to see the happiness and delight on her face and to have been able to share in her triumph. I haven’t had a Dr. Pepper in years I had forgotten how SWEET it was. It’s a wonder I’m not in a sugar and carb coma.

Thanks Mellisatwa— during her treatment we would all peruse the internet and share recipes for pizzas and different ice creams we were going to make when she got through the treatment. We have lists of ice creams to make. Now we will plan our next Ice Cream SUNDAY and make our top four ice creams that we came up with (I have 4 ice cream makers so that’s the only reason we will max out at four.) This group of girls have gotten together on a Sunday at least every 4-6 weeks for ice cream Sunday for quite a few years.

That's wonderful about your friend and nice you could celebrate with her! Sounds like my kind of celebration, pizza and ice cream and soda.

It was a rough night. I didn’t actually throw up but sure wished I could have . Just too much. I hope my friend did ok— she hasn’t eaten that volume or kind of food in 6 months. But we did have fun.

Sorry you din't feel good last night, but I'm so glad you had a lovely time with friends. I love your ice cream making and pizza making with friends. I've made pizza for years on years, but ice cream seems so tricky! 😁

Melissatwa— Making ice creams is soo easy if you have an ice cream maker. Many of the ones I make don’t even require cooking. There are many different price ranges. Mine is pretty inexpensive and requires keeping a gel insert in the freezer. It basically means no instant gratification. I have to plan for it. Now I am experimenting with substituting SWERVE sugar alternative and so far it has worked perfectly and no one noticed the switch. Most people in my world cook but few bake or make the deserts that I do so they have come to accept my portioned controlled servings. Many of my friends and acquaintances are bad T2 diabetics so I always try to make more diabetic friendly dishes and provide the nutritional breakdown of the things I make so they can account for it in their diets (not that many of them actually do that), but it is the only way my conscious can deal with it.

That is so wonderful how you take such care and how you show love to your friends. I tried using monkfruit sweetener for a bit, but it is pretty costly. From you, I have heard of swerve, but I have not tried it it yet. Ages ago I got an ice cream maker that we used sometimes when the kids were small. It was a ball with an internal cylinder where the cream mixture went. The rest of the ball was for ice and salt. To make the ice cream, the kids rolled it around the yard or passed it back and forth sitting around in the living room. Fun memories! Maybe I should dust it off and put it into use for my big kids for Christmas! 😁
