Dinner tonight was a keto-friendly, crispy thin crust pepperoni/bacon pizza. It was absolutely delicous! Nutrition breakdown for the entire pizza (which I ate!) is: 609 Cal, 30g Fat, 38g Protein, 42g Carbs, 28g Fiber, 14 net carbs. The crust is a Mission Carb Balance burrito wrap. I highly recommend it!

Thanks everyone. It really is delicious, the carb balance wrap makes an excellent crust. So nice to eat a real pizza that is also healthy and low carb.

I honestly like the low carb tortillas better at this point. the ones I get are whole wheat, slightly smaller and pack a great fiber punch for the size. I might try a pizza on them. you've inspired me.

Bill, I had a pizza stone in the oven from the getgo, preheated it to 450 degrees. Put the pizza directly on the stone and baked for 9 minutes. It was about 10 minutes after the oven was to temp when I put the pizza in so the stone was really hot. The edges got a little browner that I'd like, I think 8 minutes would have been fine. It was still good though, really crispy crust!

I tried this just using the skillet last night because I didn't want to heat the oven... fail. Good & tasty but did not look like a pizza. Next time: oven!

Interesting Bella. It turns out great in the oven on a pizza stone. But it makes me wonder what could be done with the carb balance wraps in an iron skillet with some oil? I think I will have to see. :)

You need to preheat that cast iron for at least five minutes to mimic a pizza stone.

That would probably work too - I just feel it needs the oven heat period. Or maybe a smaller pan inverted in a large covered skillet? I just always hate heating up my oven for small stuff.
