Prepping my favorite healthful foods: eggplant, sweet potatoes, artichokes, jicama, asparagus, and celery. Ok, celery is not a favorite, but it's crunchy, which is a plus!

Great job!! Prepping sets you up for success for sure. I eat a lot of celery. Yeah, it is crunchy, lol.

I love jicama, but it is such a pain to cut and this one is a bit dry, but I ate some anyway.

I love jicama. But sometimes they can be dry. I added some to the turkey meatball soup I made

Other good soup additions are zucchini (add near the end) and surprise--cabbage. In spicy soups especially, the cabbage takes on the flavor of the spices and adds lots of bulk.
