Today I've eaten a lot of vegetables. Not surprisingly, I feel great. I really like vegetables, too. I need to remember this next time I want to eat less healthful foods. The great thing about vegetables is you can eat a large variety and amount and get a lot of nutrients and very few calories. Thankful my mom raised me eating a wide variety of produce and my dad grew a bunch! My kids also eat a variety of produce. Yay!

I've already exceeded my fiber goal and I still have over 1,000 calories available. Today is my mom's 83rd birthday and we are taking her out to dinner wherever she chooses. I'm going to enjoy myself, but not offset today's good choices.
