I went foraging along the riverbank today and harvested some Japanese knotweed spears. It's a horribly invasive species that also happens to be delicious and very nutrient dense. I roasted it, but it turned mushy, so I turned it into a frittata. Now, I'm excited to taste the dish. The flavor of the knotweed is sour like rhubarb and pairs well with creamy dairy. So, my custard is made with cream cheese, with a little nutmeg.

Knotweed is the commercial source for Resveratrol which is a super antioxidant and marketed as a longevity supplement.

Never heard of it before today, but it looks like asparagus and tastes like rhubarb, so can't be all that bad. Thanks for sharing your natural knowledge, Erika.

this is really interesting. wonder how & why they started planting it ? That would be great to be able to use something that is invasive, or abundant for good nutrition

There's a website that's got a lot of info on Japanese Knotweed - Eat the Weeds. It was brought in as an ornamental and for erosion control on riverbanks. As far as macros, I couldn't find any, but it is a stem and leaf, so I'm sure a very light carb. It seems to be ultra healthy: renews your brain cells!

They pickle it in Japan. By the way it is so invasive that it is illegal to plant it in many states, so find some growing on a roadside, if you want to try it, but do not plant it. It can destroy your property - really!

By the way, after I roasted this tray, the spears were mushy (but delicious), so I chopped them and baked it into a frittata made with cream cheese, eggs and nutmeg. It's quite good; the knotweed is a little tart and contrasts nicely with the egg custard.
