Debbie Cousins's Journal, 14 Apr 19

The potato (yes, POTATO!) I'm having for lunch. Since I'm increasing the fruits and vegetables and still losing at a good rate, I'm going to try to introduce an occasional starchy vegetable. Going to have it (80g) slathered in cheddar cheese (1 oz.) and crumbled bacon (4 slices) - Fat=17.6g; Calories-301; Fiber-2.8; Net Carbs = 15.72. I can live with that. Won't be able to have a piece of Brownie Cheesecake today, but I packaged 4 pieces in individual containers and put in the freezer for whenever I CAN work it into my calories for the day.

I think I may have mentioned this before.....the trick to eating carbs is to have them with a protein. 2 net g carbs you should have a minimum of 1 g protein. So yes on the cheese and bacon!!!

I can't do potatoes at all. I bloat and my downstairs become sluggish, I think it's the starch☹️😲

D- Keylen is someone I look up to in her food choices. I don't eat cheese and if, any at all would choose turkey bacon. It is a balncing act to manage your micros and macros. If, when I decide I want a baked potato I would do a greek yogurt and chive topping with a side of chicken or salmon. Balance Balance Balance.......I also bake up lbs of sweet potatoes at a time. Cut them in half and freeze.....nice side to a meal, sometimes smash up and make into a gnocchi or pancake. . This afternoon I am making turkey meatballs to freeze. 93% lean, with egg white, oatmeal, garlic, and tons of spices. I sometimes want my pasta.....so getting as much healthy into it is important. You are a rock star!!!

Some people make a 2 ingredient banana and egg pancake. Sweet potato pancakes are the same idea..... you can add just egg, or cinnamon, nutmeg and other spices and ingredients. I sometimes also like to slice a raw sweet potato dredge in an egg mixture, egg white, and then panko crumbs and bake, Or, you could fry them but that is not my thing. Make a batch and freeze.

Mmmmm I love the banana and egg pancake, never thought to try sweet potato. I’ll have to do that. Thanks. Frying is not my thing either, but definitely will try the baked slices too. Thank you!
