I got a new cookbook from hubby for Christmas - Rachel Ray - my year in meals - she essentially wrote out many of the recipes she uses at home on a day to day basis. I'm surprised she's not incredibly overweight, as these are very high calorie meals! They also have ingredients that most people do not have in their cupboards, and though she says where to buy something, I'm just not going to buy things like Fennel salt. Hubby said to choose one recipe to try each week, for Sunday night dinner. I figured OK, I can do that. This book is arranged day-by-day, starting in April for some reason - the rest of the world starts their year in January, but, oh well. So I chose "Roast Pork with Potato-Parsnip Cakes, Red Cabbage with Apples and Onions, and Apple Pear Sauce", January 3rds recipe. Whew. That's a LOT. The roast was fine, I subbed the fennel sat for seasoned salt, and used us the rest of the white wine from Christmas in the bottom of the pan. I found a lower-calories potato pancake recipe online, and a lower calorie Red cabbage dish online (she puts a whole bottle of beer into her cabbage), and made some homemade microwaved applesauce using just one apple. The meal was really good, so I will try again before giving up on this book. Pet Peeve - I wish there were Nutritional Values for each recipe. Too bad it wasn't a requirement for ALL cookbooks!
