We got back from Buffalo yesterday evening. Weather there was fantastic and it was a beautiful day for the drive back. However after sitting in the car all day I didn't want to sit last night, so I decided to make fresh mozzarella cheese the traditional (long) way. Not a good idea, didn't get to bed until 3am but it turned out really good...so much better than what you get in the store. My daughter and her partner are coming over for dinner Thursday and we're going to use it to make a version of chicken parmesan.

Usually I don't do challenges but I joined the challenge to lose 10lbs in one month which started yesterday. It should help me get back to the right mindframe and back to losing weight again. My wife has said she'll do it with me so that'll be nice for both of us and provide some mutual support.

Whats the long way? Mine takes about 40 minutes. I am always interested in cheese recipes! There is nothing like fresh cheese. Its awesome in salads. It's great that your wife will do it with you, you guys will rock the challenge with double the focus!

Curious about the cheese too

Nic / Rockiesfan - the "long" way you use a bacteria culture instead of citric acid or lemon juice to acidify the curds. That means some extra steps and time, holding the curds and whey at temperature and letting the culture work to create acid and flavor in the cheese. It took 4 to 5 hours to make the cheese instead of 40 minutes. Next time I think I'll split the batch into 2 halves and do one half the short way, one half the traditional way, and compare the finished results to see if the extra time and work is worth it. But next up I'm going to do a brie or a blue cheese. I've got an external thermostat on order that I'll install in a dorm fridge so I can hold temperature around 55 degrees, I'll use that as my cheese cave for aging.

I bet the cheese has more flavor that way. I can buy the citric acid in bulk here but I bet I could find the cultures online. I may have to try it. Thanks!

Nic, I got my cultures online. I just ordered some cultures for blue, brie, havarti and camembert from an online supply today. I want to do a cheddar but may wait until fall as I have a room in my basement that stays around 53 degrees in the cooler months and would be a good place to age cheese...plus I'll have more experience doing it by then. Glen, we'll make it a cheese AND wine day. :)

I am going to order from New England Cheesemaking this time. Now that school's done I am taking the summer off and want to do more cheeses as well as other things. My kids have summer camp all summer hallelujah! That wine sounded delicious too. I just planted a pile of blackberry and blueberry bushes. That would be quite a party wouldn't it? It's too bad we are scattered all over the country.

A wine and cheese party would be great. Nic you could make wine or lots of things out of the berries you'll get. One gallon batches are good too, I do that a lot.
