It is very good. I like to make sort of lasagna with it. But it fries well too.

I've eaten it just like a regular eggplant. It is good roasted in the oven: brush it lightly with olive oil and roast it. Good with mozzarella and tomato sauce on it too. Go online and check out recipes. Eggplant parmesan is incredible. :0)

You can make eggplant rollatini: peel, cut the ends off, and cut thin lengthwise slices. Fry till somewhat soft. Mix mozz, parmesan, ricotta, salt & pepper, parsley and egg for filling. Plain strained tomatoes for sauce. Bake until the filling is set.

baba ghanoush......cube it, drizzle with olive oil, roast it, then mash it and mix in assorted spices. a lebanese dip/ spread. Or roast it with onion and garlic and eat as a side dish. both yummy and easy.
