When you crave the taste of an enchilada or Mexican style chillaquillas, this will do the trick.
Ingredients
Directions
- Heat the pan with olive oil or butter.
- Sauté onions till tender, then add spinach and sauté until soggy.
- Add enchilada sauce or pato tomato sauce depending on your taste.
- Scramble in the 2 egg whites until done.
- Salt and pepper to taste.
- Note: if permitted by your diet you can even add cheese.
