Eggplant Stew

A yummy, filling vegetarian meal.

Ingredients

Directions

  1. In a large pot, spray with non stick spray. Sauté garlic, eggplant and mushrooms over medium heat until tender.
  2. Add stewed tomatoes, water and seasonings. Bring to boil.
  3. Turn down heat and simmer uncovered for 20 to 30 minutes until desired consistency.
  4. Enjoy by itself or over brown rice or cooked spaghetti squash.
  5. Note: great for Fat Smash Phase 1.

Loved this dish! Very filling, I also added celery and zucchini and a dash of chilli pepper.

Loved it. I had not pre-planned, so I was out of the first 4 spices. I rsubstituted with a bit of cummim, cloke and cinnamon poweders, and grated some frezh ginger on top, toe get somewhat of an "indian curry" taste, and it was amazing! Thanks!

Very easy and very hearty. Simmered for longer than specified, omitted mushrooms but added zucchini

This is my back-up meal. It's always in the fridge. Reheats well. I put it in the slow cooker, and I like the consistency better that way.

This was absolutely amazing!! I added a little vegetable stock to make it a bit more soupy. My finicky 5yr old even liked it! I will definitely make this one often. It doesn't even need salt.
