Green Bean Salad

Tasty but simple salad with low fat cottage cheese and balsamic vinegar. Have with low fat meats for a quick and easy meal.

Ingredients

Directions

  1. Top and tail the beans. Cook until just cooked, keeping them nice and crunchy. Chop the beans in thirds.
  2. Put chopped beans in a bowl while still hot, add cherry tomatoes, onions, cottage cheese, ground pepper and balsamic vinegar.
  3. Toss to combine and enjoy.
  4. Note: this salad goes really well with low fat sliced turkey breast.
