Ingredients
Directions
- Mix dry ingredients in mixing bowl.
- Make a well in the center and add wet ingredients. Mix until just combined.
- Pour into greased 8x8" pan.
- Bake at 400 °F (205 °C) for 20 - 25 minutes.
- Cut into 9 pieces.

As a Southerner, this is by no means a "traditional" recipe. -- it is healthy! But we like it even as a stand-alone cornbread.
This worked well as a topping for a vegetarian chili casserole -- it has even worked with unsweetened almond milk. Also, I used white whole wheat flour for the whole grain white flour.
