Spinach Quiche

A simple quiche made with an egg and cottage cheese base.

Ingredients

Directions

  1. Pre-heat oven to 375° F (200° C).
  2. Thaw, rinse and dry frozen spinach.
  3. Mix together 2 eggs and one egg white. Mix in cottage cheese, tomatoes (drained), spinach, and about half of the mozzarella cheese. Add Italian seasonings if desired.
  4. Put mix in pie pan or 8x8" pan lightly sprayed with cooking spray (like Pam).
  5. Place dish in oven for about 12-15 minutes, then top with remaining cheese and heat for an additional 2-3 minutes.
  6. Let cool slightly before serving.

I'm very happy that some of the members tried the recipe and enjoyed it. adri_rot you would need to crack an egg and separate the yolk from the white hun, and then you'll have your egg white.

I added 1/ 8th teaspoon Italian seasoning and 1/4th tsp salt and we now call it Pizza Quiche for my 4year old great grandson.

Easy, tasty, low calorie, love it! Make this the night before and take it to work the next day and reheat in microwave. The only criticism I have is that I found I need to bake longer about 25-30 minutes to have a firm end product. Otherwise perfect, healthy morning food, or even lunch!
