Great substitute for real cheesecake for South Beach dieters.
Ingredients
Directions
- Allow cream cheese to soften.
- Mix on medium speed until light and fluffy.
- Add vanilla flavoring and Splenda to cream cheese and mix at medium speed until well blended.
- Pour into pie plate and freeze. You can make this into mini cheesecakes by using small ziplock containers and freezing them.
- You can either eat this frozen or allow to thaw.
- Delicious!

This is incredibly yummy. Fits in my diabetic low carb diet. I plan to freeze it and cut it into squares. I also may mix in fruit, freeze and make frozen fruit bars.

If you eat just 1/2 of this, but top with fresh fruit, pecans, walnuts--whatever--it would make a beautiful, sweet, elegant dessert. Yum. Why even freeze it? Put it in individual dessert dishes and refridgerate.

I tweeked it a bit and added 1-2 tablespoons of cocoa powder and a total of 3 packs of splenda. I also crushed almonds and put them on the bottom of 4 ramkin cups and then added the mixture ontop to freeze. Even though you suggest eating them frozen, I found it difficult so I nuked it for 10 seconds. If you do this be sure it is a glass or ceramic container because the pc's in the plastic break down in the microwave; we want to be thin and healthy too!
