Almond Coconut Cookies

Gluten free and sugar free.

Ingredients

Directions

  1. Preheat oven to 350 °F (165 °C).
  2. Mix all ingredients.
  3. Use 1 tablespoon measure to put rounded dough on covered with parchment paper cookie sheet.
  4. Bake 18 minutes (makes 18 cookies).

Reviews 
Very good and beautiful color. You must have 'tasted' the dough quite a lot because I made 24 1 tbsp cookies with that amount :) Maybe a bit too dry? I think I would add some (stelvia + water) syrup on top of each cookie after they are cooked. I added a coating of chocolate ganache on top, but that more than doubled the caloric load.
