Mini Spinach & Ricotta Pizzas

A yummy meal that requires minimal effort and is ready in no time.

Ingredients

Directions

  1. Cut pitta in half and place on a baking tray covered with aluminum foil.
  2. Pre-heat oven to 400 °F (200 °C).
  3. Peel and crush the garlic, then mix in a bowl with half the ricotta, oregano and pepper. Season with pepper (and salt if you wish).
  4. Spread the mixture on the pitta breads, then top with chopped spinach.
  5. Finally, crumble the remaining ricotta cheese over the top.
  6. Place in oven for about 5 minutes, and remove when cheese starts to brown.
  7. Eat straight away for maximum enjoyment!
  8. Note: I prefer to use 2 mini-pittas, but I've written this recipe for a normal-sized pitta because it's easier to find in the supermarket.

I have made something like this before, but I used portobello mushrooms instead of the bread. Try it, it is so tasty!

I'm not a ricotta fan so I substituted the ricotta for less than half a hand full of shredded mozzarella. Mixed it in with the spices and cut it up along with the spinach. I put it on top of the pita and added a few pieces of mozzarella from a ball. Turned out amazing. Its fast and easy but best of all it taste amazing!

This makes for a great filling lunch or simple dinner. I used used trader joe's fat free ricotta (1/3 cup) and trader joe's 6" whole wheat pita (80 cals each). You can either split them in half and do two pizzas that way or use 2 separate pitas for a few more calories. I also added an once of part skim mozz to the top. I do want to experiment with more seasoning, though!

I actually substituted fresh basil for the spinach because I forgot the spinach at the supermarket this morning. I also added a small amount of reduced fat shredded mozzarella and at 1/2 the recommended portion with a salad on the side. It was so yummy and filling. Thanks for the great idea. I am going to share this with my friends at work who are always looking to make quick healthy meals during their work day.
