Zucchini Hash Browns

Yummy and healthy zucchini hash browns that helps with potato cravings.

Ingredients

Directions

  1. Heat oil in skillet.
  2. Mix together zucchini, slightly beaten eggs, salt, pepper, garlic powder and onion powder.
  3. Drop by spoonfuls into the hot skillet.
  4. After browning on one side flip and brown the other side.
  5. Note: substitute egg whites to lower calorie, cholesterol, and fat counts.

This is a vegetable that you can have on induction and of course eggs. I made smaller portions and it is delicious!

Ended up with too much egg in it but loved it anyway :D mine came out more like an omelet tho - must try it again

Havent tried this yet but definately do intend too, will let you know what i think of them as soon as i do, thanks for sharing this recipe, miss potatoes and always looking for and trying to create LCHF recipes. :)

I don't know about potato cravings, but I made these yesterday, and they were nice! It was just something different, and it reminded me of egg foo yung...really yummy. Having them again for breakfast this a.m. I likey!!

AWESOME- tried this on last night- although I scaped my finger ( no blood ) this was simply delicious- I also added 1 slice of turkey bacon and a dash of hot sauce-

I used 5 zuchinni and 6 large eggs.. I don't think I'll use as many eggs next time and I will squeeze the zuchinni dry there was a lot of liquid in this recipe.. but very tasty and I'll make it over and over again..

These were good with the addition of another cup of zucchini, some extra garlic powder and grated asiago cheese in the mix. Very good.
