Coconut Muffins

Healthy low carb muffins.

Ingredients

Directions

  1. Preheat oven to 180 °C.
  2. In a large bowl, combine coconut flour, salt, baking powder and cinnamon.
  3. In a separate bowl, mix the eggs, melted butter, vanilla and honey. Whisk the ingredients together to ensure everything is blended through.
  4. Slowly pour the wet ingredients into the large bowl containing the dry ingredients. Stir until a consistent batter is formed (in this step you may add some nuts, or raisins or cranberries or any dried fruit).
  5. Grease a muffin baking dish. Pour the batter into the dish and bake for about 20 minutes.
