Sausage and Tortellini Soup

Delicious comfort food, full of chunks of sausage, tender veggies and great cheesy tortellini. A fall and winter favorite.

Ingredients

Directions

  1. In a large pot or Dutch oven, crumble and cook sausage over medium heat until browned. Remove to a paper towel to drain but keep about 1 tablespoon of the fat in the pan.
  2. Sauté pepper and onions until soft. Add garlic and cook for another minute. Add water to deglaze the pan, scraping up any browned bits.
  3. Add beef stock, tomatoes, sauce, frozen carrots, spices, remaining water and sausage. Simmer at least one hour or until carrots are soft and flavors have come together. The longer it simmers, the better.
  4. Add salt and pepper if needed.
  5. Ten minutes before ready to serve, raise heat and add tortellini. Cook, simmering, until pasta is tender.
  6. Note: can be served with parmesan cheese sprinkled on top for an added burst of flavor.

Very good and filling soup for a chilly night. I also substituted turkey Italian sausage and used no salt added tomatoes and broth.

I ♥ this recipe. I also add onions, mushrooms and low sodium beans (black and red) very, very good!

We liked this soup and used a smoked turkey sausage to bring down the calories a little more.

made this tonight and used turkey sausage and it was GOOD!! took away alot of hte sat. fat and total fat using turkey instead.

no figured out points and for 1 cup you have used 10points. I might try this but use turkey saug.and than check out points...

One of my all time favorite fall dishes!! And you can change up the flavors of the tomatos in it for added spice!!
