Oatcakes

Traditional Scottish oatcakes.

Ingredients

Directions

  1. Pre-heat oven to 375 °F (180 °C).
  2. Combine dry ingredients (oats, salt, baking soda and flour).
  3. Cut shortening into dry ingredients.
  4. Add water a tablespoon at a time to form a stiff dough.
  5. Roll dough onto floured surface until about 1/8" thick and cut into rounds, approximately 2 1/2".
  6. Bake on ungreased baking sheet until cakes are golden, about 15-20 minutes.
  7. Serve with preserves, butter, honey, cheese or any topping you like!

Reviews 
Rather bland. Definitely needs toppings. Reminds me a little of a granola bar, only softer, and with a lot less salt than store bought. ETA: I made mine with butter since I didn't have shortening. Making 14 cookies, the calorie count is only 67 each.

This recipe should read 1 c. flour and 1/4 tsp salt.
