DO N OK's Journal, 20 Mar 19

I had my students DO a Iron Chef Competition with KETO only foods, in class then do food analysis break downs ..The winner was a Spanish Chicken Noodle soup,, The noodles were made out of Spaghetti squash..It was so good , I ate 3 bowls, I really could not believe the taste sensations, and food complexities. I mentioned they could can and sell this product. Any way, My stomach issues GO N overtime lately..Really don't know what is happening, so have been DO N IF late at night with no dinner and then just eating lunch, seems to be fixing the problem, or maybe it was the Keto MODIFIED Jewish Penicillin HA HA !!! I ate the other day,I having lots of test next week for bloods etc..So Life goes on and I'm DO N OK !!!

@@@ Easiest way is use your favorite chicken noodle soup recipe, then instead of noodles add the cooked spaghetti squash last minute and top with chopped fresh cilantro, some Students used Culantro instead, they had 2 different toppings..Culantro is milder flavor

So what made it Spanish?

Hey I just read an article about food in Trinidad that mentioned culantro and said I couldn't find it in the U.S....so naturally I am determined to find it. Where do you get it? Are you in the states? Sorry about your tummy troubles. As you can see it is not deterring anyone from wanting to try you soup.

It is CILANTRO in the produce isle, dried you will find it as cilantro or coriander. You should be able to find it in most well stocked American markets. If your recipe calls for fresh cilantro and you can’t find it you can sub fresh parsley. The flavor will not be quite the same but would work most of the time.

I've never heard of "culantro," so I looked it up: "CULANTRO is an herb that has a similar aroma and flavor to CILANTRO, but they are not the same plant. It has long, serrated leaves and looks a bit like long-leafed lettuce. Culantro has a stronger flavor than cilantro and is therefore used in smaller amounts. Unlike cilantro, it can be added during cooking rather than afterward. You will find culantro specified in recipes for dishes from the Caribbean, Central America, South America, and Asia." I don't know why, but cilantro and Sprite both taste like soap to me! I can only use a touch of cilantro in recipes that call for it.

Cilantro and coriander are different names for the same plant. Cilantro is the leaves, coriander is the seeds, although I've heard some folks from outside the US refer to cilantro as coriander plant.

Not crazy. Here's a link. https://whatscookingamerica.net/cilantro.htm

Mira— this is actually a genetic issue. There is a gene that we carry for like/dislike of cilantro. When you have your genes sequenced, that is one of the things the report is able to tell you. The soapy taste or even a metallic taste is in your DNA
