Since January I've been working on using more portioned beans, whole wheat spaghetti, fruits, etc. Trying refridgerating whole wheat spaghetti overnight to see if the touted resistant starch works for me. Air popped popcorn is a go to as well. Not going overboard, just expanding food choices. Using some of my winter survival foods ☺
As always, a work in progress.

Pasta cooled after cooked and then reheated is a resistant starch and is not as easily broken down in the gut so it does not affect Blood sugar as drastically. But it is still a matter of portion control. 1.5 oz. of pasta is a perfect amount for me and let’s me enjoy it once in a while. I’m lucky that I don’t like my spaghetti drowning in sauce so 1/3-1/2 cup is more than enough.

Well, since the scale is moving beautifully the direction you want, I'd say you are doing so well!! I eat popped corn many times a week. My popper uses a little oil, but it is still a lovely, filling, fiber filled food! Yay for finding what is working for you!!!

Yes, Kenna, that is (cooking/refridgeration) what makes pasta a resistance starch. I go for at least a couple of hours in fridge, usually overnight though.. Also, cooking pasta "al dente" slows the digestion process. I've also tried it with chickpea pasta too. I do enjoy pasta in the cold months so weighing the pirtions is key.

I should rename those food stuffs as "covid survival foods". Been since March that I've gone grocery shopping in a store.

Thanks Sheila! I've got a really long way to go. It seems like every time I inch closer to that goal, the more elusive it seems. Body just won't give the fat up. Still working at it but it can be very frustrating.

You're getting there Kattay, but I agree, the closer I get to my goal the more I seem to why away from it. But, we CAN do this my friend and we will.

Thanks Bill. At least it's whole wheat pasta and sometimes chickpea pasta. Threw away all the regular a long time ago. That was actually one foodstuff that I did throw away ☺ Couldn't eat it responsibly.
