Last night for dinner I made my version of a dish I saw on TV. A tostado made with black beans and sautéed yam, leftover rotisserie chicken , topped with cabbage marinated for about 30 min in lime juice and Mexican crema. It is a real keeper. It was so good. It was just canned black beans drained and lightly rinsed. I mixed in some Trader Joe’s pepita salsa and mashed Into “refried beans”. I toasted corn tortillas in the oven till firm and crispy. The sweet potatoes was sliced and diced into small cubes and sautéed with onions, your choice of chili peppers (I used Aleppo chili powder, California chili powder and a pinch of cayenne, black pepper with a little of the same TJ’s pepita salsa thrown in. . Spread a thin layer of beans on the tortilla, add the yam combination, top with chicken, then the cabbage and top with a small amount of crema, a small sprinkling of pepita seeds and cilantro.This is not a meal for keto people but for others it is a good combination of nutrients, fiber, proteins and one was enough for me— fully satisfied. There is no real recipe—- I just took the concept and ran with it.

The lime juice is NOT mixed with the crema. The comma didn’t make it to the page. The power of proper punctuation.

I love Mex mash-ups with different flavors. I have to watch out for beans, but will probably be experimenting with the other flavors soon. Thanks for this! :0)
