Good morning friends – it is a great day today. Why? Because it is how I choose to approach the day. I had a great weekend with a birthday celebration and a work Christmas party. Proof that I can go and participate in any event that involves food without having to dread the potential of “bad” foods being there. Despite my unsupportive Pancreas I was able to make great choices and really enjoy the night and the company of the people in attendance – not having to be the “food issue” guy is such a relief. Talk about true freedom. The upside was that My wife made a red velvet cake with a mix of regular flour and almond flour – we used Swerve+stevia instead of sugar. Cream cheese frosting with swerve+stevia there as well. Net of 10 Carbs per serving and it was delicious. We are working on getting the recipe into the cook book now. Thank you to all of you who have helped me through your posts, funny memes and encouragement. I hope you al have an amazing week – take time to embrace your Joy and pursue your dreams with the unbelievable gift of freedom we are given.

Good for you! Yes, it can be done, celebrating does not have to mean overindulgence. The cake sounds delicious! Are you writing a cookbook? That sounds like fun.

Tahoe- everyone I know is diabetic or soon will be so I have been experimenting with SWERVE very successfully; pies, cakes , cookies — have all come out great and literally no one has guessed. I just have to be sure to let people know that if they replace sugar with all SWERVE that they may experience some stomach grumbles and diarrhea if they over eat it and they are not used to it. It has no effect on BS.

Kenna Morton - that is why we do a mix of the Stevia and Swerve...plus the Swerve adds (can add) a menthol effect if you use a lot. Swerve has worked well for me so far.

The best wedding gift I received when I got married to ex #1 was a handwritten cookbooks from my mother-in-law of all of my husband’s and the family favorite recipes. It was such a thoughtful gift from her to me. I still have it to this day. I decided not to pass it along to his wife # 2 although I should have because she and I turned out to be the best of friends and even vacationed together twice. We left him home.

Kenna...I also took the recipe cards from my ex mother in law! My first husband never cooked a single thing in the 12 years we were married, so I figured he didn't deserve them. ;)
