that is so cruel to show a Louisiana person real gumbo when they live in Texas..(they serve gravy with one shrimp as gumbo). I sooo miss gumbo. thanks for the memory

Vonneb, gumbo is not difficult to make. Order some Kary's roux on Amazon (If you can't find it locally) and follow the recipe on the label. You can also watch his son's videos on YouTube, it's the real deal, I know Kary personally. For fewer calories, use the gumbo mix, no oil, so fewer calories.

I'm just trying to think of food we have that is special to the northwest... Nope, can't think of anything interesting. There are Nanaimo bars we make with a custered powder I can only find in Canada. Yeah... Not that interesting.

Melissa, what makes it gumbo is the roux, a combination of oil and flour that is cooked long and slow, constantly stirred, until it is the color of chocolate. However I now buy Kary's Roux instead, because I know Kary and his roux is the same as mine. You can see his son, Ross demonstrate on YouTube, search for Kary's Roux. If you can't find the roux locally, you can get it from Amazon. Yes, you can make the gumbo with shrimp (and crab meat if you like) instead of chicken and sausage and you don't have to add okra if you don't want to.
