We make crepes the same way, just eggs & heavy cream; 1 TBSP cream for each egg. Cook over low heat. Small flip-pan works great for this. Stuff with whole milk ricotta with cinnamon stirred in & fresh fruit. Top with little whipped cream. Only sugar is the fresh fruit. Make extra for another quick breakfast!
