Cleaned out both refrigerators and freezers today. Turkey vegetable soup. Eat tonight and freeze in take to school size portions. Chicken Mushroom bone broth and beef bone broth from Kettle and Fire, two kinds of squash, coleslaw salad mix, broccoli, canned diced tomatoes, lots of onion, garlic, Trader Joe’s frozen roasted corn, green and red peppers, carrots, celery. Fresh bay leaf, savory, pepper, saffron, turmeric, Sazon, basil, thyme. Didn’t bother to calculate nutritional values. My portion will be 1- 1.5 cups. Lots of good nutrients. Probably not for Keto people.

Keyten— I usually add either beans or potatoes to this soup, but potatoes don’t freeze well and I wanted the veggies. To be the only carbs.. if you haven’t tried Kettle and Fire bone broths, I highly recommend. I used to mail order from the company but now both Amazon and traditional stores like Albertsons and Sprouts carry it. When I order it, I buy a case of each flavor.

The bone broth has sodium in it but not nearly as bad as some. I use low sodium or no salt added tomatoes (canned). I also only eat 1 or 1/2 cups. I try to consider the sodium content of a meal in the frame of how the sodium content for my other meals turned out. What I logged for the soup tonight was just a random FS entry. No real bearing in reality

Kenna, have you considered using rutabaga to replace your potatoes? That looks delicious, I love vegetable soup.

I have to admit that I have NEVER had a rutabaga in my life that I know of. I may give that a try. Thanks for the suggestion shirfleur1.

I try to loosely follow Keto, and I would totally eat that. But I am on maintenance also, am in my 70's and live in Southern California. Maybe not as healthy as you, but I'm working on it.

I used to sub rutabaga for turnips all the time. And every day is a good day for soup v

Rutabaga has a mild, slightly sweet flavor. I like to make spirals with it, as it mixes in with other foods well. It is much milder than turnips (though I like turnips, too)

Snowwhite100– for me, it’s about doing things that are HEALTHIER for me, Not perfect, but better. It is a life long process. I love the name that you use, Snowwhite100. I once worked with a lady whose name was actually Snowwhite.

Jhieatzman— good for you. There are no high carb starchy veggies in this soup like potatoes or beans although my version had roasted corn. I think vegetables are important on many levels. I’m not Keto or anything particular in my WOE, I just like good food and have many recipes from all sorts of diet types. I wish you a successful journey.

Have any of you eaten kohlrabi? Looks like a green apple with 3 antennae coming off the top. Crisp like an apple with a very mild radish taste and a hint of maybe dill. I am so hooked on it and it has really good nutritional value. It can be cooked but that doesn’t really appeal to me. I like it just raw, or in a salad and my favorite is in a coleslaw mixture of cabbage with shoestring cut green apple and kholrabi. Awesome flavor and crunch.

Kenna - wow, I just checked out kohlrabi. When eaten raw, this veg has v-e-r-y low carbs of 8.4 grams per cup and it has 4,8 grams of fiber, for a super low of 3.5 grams per cup. Kohlrabi is on on this weeks grocery list. I needed a new item to add to my menu. Thank you, Carl

Mochafudge1, — if you don’t already, you might consider weighing your food in grams. A much more accurate way of tracking. The kholrabi leaves can be sautéed as well, like spinach but I have not done that yet. When I go to the store tomorrow I will buy rutabaga and add some to my next bowl of that soup.

Great suggestion, weighing in grams. I use a digital postal scale, and oz weights just are not pinpoint accurate. Too large a unit. The gram mode however work great.

Lara are— Sazon is a Mexican spice packet that contains achieve, garlic, salt and cilantro. You can buy it in small packets by brands such as Goya at ant Hispanic market and most mainstream markets, especially here in SoCal. Go to my journal and I posted a picture of the packet. It also shows a website that I use to look ingredients up. Several of my friends are from other countries and I always have to look stuff up that they tell me about. On this same website there is a recipe for how to make your own Sazon, which is what I do because I use so much of it.. hope thar helps.
