Now, you can't tell from the picture how DELICIOUS or INGENIOUS they were - but I made KETO CRACKERS using one of my hot dog buns! I cut it into 1/4" slices while it was frozen (though it probably would have cut fine if it hadn't been). Then, I placed all the pieces (I think there were 20 when I started - ate a few before I took the picture - I DID weigh the pieces, and they were 50 grams). On half, I put some Boursin Garlic & Herb cheese (that I had just sampled at BJ's today), and on the other half I put salted butter. I used to eat saltines with butter on them EVERY night before I would go to bed. OH - you need to know how I turned them into crackers! DUH! I put my oven on 200 degrees Fahrenheit, and placed the slices on a small rack inside a small baking pan. First I cooked them for 25 minutes. Then, I turned them all over and cooked for another 20 minutes. Then, I turned the over one last time and cooked for another 15-20 minutes. They were nice and crunchy, but not at ALL burnt! SOOOOO delicious! I didn't add any flavorints to the actual crackers themselves, because I knew I would be eating them WITH flavorful toppings. I've MISSED crackers SO much! I ate the WHOLE recipe - not my fault - I OFFERED to share with my husband! Total Fiber: 9.4g; Net Carbs: 8.51; Total Calories: 471 (and that all includes 1-1/2 Tbsp. of butter and 2 Tbsp. of the Boursin cheese!) I'm happy!

I haven't made any Keto recipes yet. I think I am afraid to. I might like them too much. Well, okay, I'll get around to it. But that's a lot of calories for me (at 1100 a day). I just eat a tablespoon of Peanut Butter, or Almond Butter, or cheese for a treat. For now, I am eating an egg fried with spinach or cabbage every day. I heard of using radishes fried as a substitute for potatoes. I am thinking to add a half apple to my WOE soon. Even though they are high in sugar, I think they are very good for one. I'll tell you what I miss and have been thinking about. Stuffing a chicken with a bread stuffing with apples and prunes (and onions and broth of course). But I used to binge on it, it was so good. A long time ago, I was a pretty good cook. I haven't made good homemade spaghetti sauce (Gabriel) in a couple of years. I had too much in jars from "emergency supply" getting old. If I put fresh onion and garlic and some kind of meat in it, it isn't half bad.

You are so creative. My cracker snack is Parmesan crisps. I buy them because the pan cooked or oven baked don't get crispy when I make them. Two crackers almost the size of the palm of my hand. 55 calories and .5 net carbs. Four flavors. Amazon. I usually spread laughing cow wedges. One wedge 70 Cal and 1 net.
