Debbie Cousins's Journal, 02 Feb 19

Okay, so here's the scenario - help needed: In 7 days, I have to host a 3-way Birthday Party for my husband (58), son (31) and grandson (3). My daughter wants to have it at 5pm - that sneak wants me to make DINNER for everyone! I know I won't be eating the dinosaur cake, but I want to make all other foods that I can enjoy too (after going to all the trouble of making them)! At Christmas, I made "Bacon-Wrapped Onion Rings" which everyone LOVED. That will definitely be on the menu! (I didn't figure the macros last time, so you'll have to wait for the recipe until the 8th when I can weigh the onions and take a picture! Sorry, folks!) I was also thinking I could make "Deviled Dinosaur Eggs". Everyone loves my world-famous "Chicken Salad," so I could serve some of that on Party Rolls (and I can eat mine on Celery). That's not nearly enough food, though. THIS IS WHERE I NEED YOUR HELP! Does anyone know of any "finger foods" that are low in Net Carbs (and preferably high in Fat and Fiber)?

Jalapeños stuffed with cream cheese wrapped with bacon-cut them long ways, take out seeds, put in the cream cheese, wrap and bake. Chicken wings with garlic and Parmesan, cold shrimp with cocktail sauces. Mock potato salad-use cauliflower in stead of potatoes (sorry you said finger foods). Dill pickles, olives, smoked oysters.

fathead pizza (it is a big costly with the almond flour but really easy to make and the crust can be made ahead)

Attended a church meeting where yummy food is a highlight. Decided to make Genoa salami with Creme cheese folded over itself and secured with a toothpick. Interestingly, they were devoured by the men. Normally, I would take a dessert and bring home half.

I make salted preserved pork or beef roast and serve slices at my parties . Any nice roast cut into thin slices and served goes around well.

If you download the "Tasty" app check out "zucchini enchilada roll-ups" and the "chicken quesadilla rings" - substituting low carb tortillas. And "bbq bacon meatballs" but can be made without the bbq sauce and still be good.

Ploughman's Platter the low carb way: cold meats (if you eat meat), assortment of cheeses, pickles, boiled eggs, celery sticks, guacamole, a spicy (jalapeno) cream cheese dip and salsa.
