My wonderful next door neighbor came over in a panic this afternoon and asked if I knew what a Keto diet consisted of. They are of East Indian background. She is strict vegetarian and he loves to BBQ but otherwise just eats Indian food. Apparently they were having unexpected guests for dinner and the women was pretty hardcore about only eating Keto. . So I agreed to put together a dinner, basically with what I had in the house .

Cauliflower casserole— cream, extra sharp cheddar cheese, cream cheese, butter. Melted the cream and cheeses together. Blanched the cauliflower and put it in a baking dish. Added the cheese mix, and just a little diced green onions, Baked up some bacon, crumbled it and mixed it in.. then topped the dish with just a few green onions for color, a little of the bacon and chopped walnuts. Baked it for about 20 minutes. Then I made a do it yourself salad bar with what stuff she and I had on hand, like mushrooms, romaine Lettuce , compari tomatoes, cucumber, blueberries and cantaloupe, dates and roasted edemame nuts and kalamata olives (I think). Figured everyone could pick and choose what worked for them. I had some traditional American no calorie salad dressing and my friend made something more familiar to them.. I don’t know what it tasted like but my neighbors said that the meal was a huge hit with the Keto Wife and her husband. I’m sure glad I’ve been paying attention as I have looked at the great meals that you all have posted. THANKS!

They are equally as good to me. We even have each other’s house and car keys just in case. She doesn’t drive and he travels a lot back and forth to Europe and within the USA with his job. He builds orthopedic prosthetics. So I help her when he is away. They don’t eat dinner till at least 10 pm, but she always brings me plates of wonderful African and Indian foods. We are lucky.

Good for them!! My diabetical doc says India has one of the highest rates of diabetes in the world due to all the carbs they eat.....I go to the Indian buffets and eat the curried meats and a small portion of carbs. Southern India cuisine of course where the foods on FIRE!! I love it❤️❤️❤️❤️❤️❤️❤️❤️❤️

Through these people I have eaten and seen foods, legumes, fruits and vegetables that I never would have known existed. One of my favorites is sautéed dandelion greens in chickpea flour. Sooo delicious. She is vegetarian, and extremely healthy. She knows how to combine foods — each an incomplete protein in itself but when combined make a complete protein comparable to meat. Actually hummus is one such food. Chickpeas and tahini are both incomple but when combined they are a meat equivalent.. she fuels my love of learning about this stuff.

Oh yes, they also use the leaves off of standard radishes to make an incredible dish from. I now make it myself.

Sounds heavenly. I'm lucky if I get a hello. I'm told I eat funny. I don't want everythin fried or gravy hiding my food. I don't eat chicken or pork skins. And I think a salad consists of more than iceberg lettuce, tomatoes and cheese with Ranch dressing so I don't go to our local diner.

I was horrified when I first moved here. I couldn't understand how the community was so overweight. not even over weight but extremely obese. Then I saw what they eat. I drive more than 30 minutes in order to eat out. And it's difficult to find most healthy foods so I order a lot on line. High protein is a foreign concept when talking about losing weight, to me, but it's working.

I prefer not to eat out a lot. I’ve been retired for about 6 years or so And so have more time to cook.
