At a great little restaurant eating a salmon “burger” with coleslaw. 😋

All:
I enjoyed this dinner. It is wild caught salmon cakes drizzled with Sirachi sauce accompanied with simple peas in butter. In addition, off camera I made a nice salad comprised of endive, cucumber and tomatoes covered with Honey-Balsamic dressing.

Okay, I am back on the crepe wagon. Today, I knew I needed something sweet and I resisted going out and eating cookies, cake or nut rolls.Instead I made my crepes again. They look and taste great.
I use steiva instead of sugar but I'm sure any sugar replacement would work. The batter is almond flour and egg. Probably most of carbs come from the banana.
And, I make my own strawberry chia jam.And I whipped up the whipped cream too.
The crepe recipe from sweetashoney.co (only four ingredients) - 4.6 carb
The chia strawberry jam can found everywhere on the net , just search for it. A couple carbs per tablespoon.
As you may know I am a bit of critic with alternative low carb foods with their tastes and mouth feel but this was YUM

Hello All:
Needed a quick dessert fix. Nothing faster than some crepes. I stuffed one with strawberry chia jam and added some bursted blueberries for contrast and a couple of dollops of whipped cream. Hit the spot. Sorry for the bad pic, I think my lens on the iphone got fogged up in the kitchen.

Not sure I saved the last post I made. Apologies if this is a duplicate. Anyway, I have been looking at recipes for low(er) carb pancakes. I have made them before but they always taste grainy. Well, I found a recipe and some techniques to completely eliminate the graininess - I'm impressed.
Tips:
Always use superfine almond flour and not meal
Make your batter in a blender and not whisk by hand ( gotta get everything together)
Let mixed batter sit for at least two minutes ( the flour absorbs moisture)
Look for wet type ingredients that add moisture: cream cheese, avocado oil
Don't use butter or olive oil in batter - they clump
Recipe from the novicechefblog.com and recipe called low carb keto pancakes. I added strawberries, blueberries microwaved until burst, bananas and no sugar syrup. And, oh yea that big dollop of butter .
And , no grainy texture - I'm impressed the authors figured out the tricks.
