So I didn't put my end of year weight in because it made me sad that I'd gained so much back over the last few months. Today's weigh-in made me feel better so for accuracy's sake, I entered my weight in December. I'm back on track!

Today was Greek day! Greek omelet with tomato and feta cheese and (air) fried taters with herbs, a Greek salad with "pita" chips for lunch - although I didn't have cucumber so I had to sub with zucchini- not the same but still good. Then I made Courgette fritters for dinner for the first time ever and they were quite good. Time to do a little planning and shopping for next week. I still have Thai, Chinese, German and lots more variations to try. I know how I can get stuck in a food rut and get burnt out on the same stuff all the time, so I think this is going to help me with variety and trying new things.

Yesterday (the 6th) was French day. French omelet with herbs for breakfast- quite simple but actually really tasty. Homemade French Onion soup for lunch and Ratatouille for dinner. Also had a coffee smoothie which I probably should have saved for the morning rather than the evening. Finally, tried a spiced apple yogurt shaved ice dessert but that didn't quite work out since my ice shaver quit working and trying to shave by spoon was too tedious. So I nixed that idea and just had some popcorn instead with my Disney movie. Today I think I'll try a Greek theme.

Today's theme was Italian, yum! Fritatta for breakfast, cheese ravioli for lunch and my own little personal pizza (with a glass of wine) for dinner. A chocolate over raspberry over chocolate rice cake for dessert and a protein shake, all under 1300 calories. Tomorrow's theme is French cuisine. I'm having fun with this!

Looks like I had a theme for today- Mexican food! Breakfast tacos, chicken and cheese quesadilla for lunch, and for dinner, a spicy black bean and chicken taco salad. Plus a peanut butter protein smoothie and popcorn for an after-workout treat. So much flavor, I'm full, and everything was only about 1200 calories. I kind of like this theme idea... maybe tomorrow I'll try for an Italian day!
