I couldn't wait until Monday to weigh in so I jumped on the scales after my workout this morning. Whoohoo, NOW I'm showing progress! Took a minute for my body to figure out what was going on I guess. 2 pounds down, only 38 more to go. Had a great breakfast this morning too, under 300 calories, very filling with plenty of protein- something I struggle with a bit as I don't eat much meat. I believe I'm what you would call a flexitarian. I'm happy with being a vegetarian most of the time, but every once in a while I do like a slice of crispy bacon. I can't eat ANYTHING that looks like the critter it came from though (nothing on a bone) and I find eating steak a challenge and prefer not to. It seems as time goes on it's getting harder and harder for me to tolerate meat. Weird really. But I'll never be a full vegan as I do enjoy cheese and eggs.

Breakfast- my favorite meal! The presentation of food, for me, is part of the joy of eating. I also like taking photos of my food. I've accumulated enough pictures over time that I've been thinking about making a poster with all of the healthy meals I've made to hang in my kitchen. I think it would be a great reminder that you CAN eat a huge variety of things, eat well, and still lose weight if you keep at it. My problem isn't knowing what to eat, it's me getting busy/lazy/depressed or lax about making those positive choices and going for fast food or processed carbs (or pints of chocolate peanut butter ice cream). I'm sure it is a common battle we all face. I love to hear any unique tips (like my pending healthy food poster) that you may have used to help keep you on track?

Low calorie- but very tasty and hearty breakfast this morning! Not quite two weeks in and I'm already feeling so much better by making healthier food choices and getting at least 30 minutes of exercise each day.
