1/26/18 – 9:21am - Well, I opted out of the bacon & eggs, and decided instead to make a 3-Egg Omelet with Ham & Cheese, topped with Guacamole, Sour Cream and Black Olives. I’m working on creating the recipe now, but I’m still debating on whether to list it as 1 or 2 servings. I knew I wouldn’t be able to eat the whole thing, so I cut it in half and put one half in a container to store in the fridge (without the extra toppings, so I can heat it without them). I also forgot to post the picture of my dinner from last night. It was DELICIOUS, and only 5.6 Net Carbs (grilled chicken breast, broccoli, cheese & Ranch dressing). I’ll post the pix of that AND my 1/2 Omelet now. Maybe if I post several times throughout the day, I can keep up better than trying to do it all at once at night (which I, almost invariably, forget!)

I started with a 2 egg omelet but only ate 1/2.Just no appetite.
