6:15am – Yesterday’s Exercise was only 1,704 calories burned (which is still a lot more than I was doing BEFORE joining FS. My Net Carbs for yesterday were 23.34. I seem to be getting the hang of all this, Praise the Lord. I discovered that I had never submitted the Amazon order for the Walden Farm’s Pancake Syrup, (which I DID do yesterday), so it will be coming tomorrow. Can’t WAIT to have my Pecan Pancakes back! Of course, that means that sometime today, I need to MAKE some more. I think I’ll make a DOUBLE batch (partly because I make such a MESS when I make them, and partly so I won’t have to make them as often). I DID make a double batch of Cherry Creamsicle Jell-O Gelatin Cups yesterday, so I have ten 6-1/2-oz servings in my fridge, ready for anytime I want them. I REALLY also want to make some more of the NO-GRAIN “Whole GRAIN” SEED CRACKERS (uses only seeds and water). I LOVE butter, and I used to have saltine crackers with butter on them before I went to bed every night (most times when I was actually already IN the bed!) Oh, and yesterday, I also took a full bag of Mac’s Original Fried Pork Cracklins, and ground them up in my food processor, so I could put them in the database for using as a breading. One 6.25-oz bag yields 1-1/2 cups of loosely packed crumbs. That way, I won’t have to crunch them up every time I want to use some. I have some iceberg and green leaf lettuce in the fridge that are about to go bad (if they already haven’t), so I really need to make some salad, too. AND, I have a rapidly-deteriorating cabbage that I wanted to use for a "Cabbage Steaks" recipe a friend shared. SO, today will be a COOKING day. Doubt I’ll get much more than that done, because when I spend a lot of time on my feet, it makes my knees hurt a LOT the next day. Although, I REALLY would like to get my living room vacuumed as well, now that all the Christmas stuff is out of herr. We’ll see.

Thankfully, the 3-Way Birthday Party, which was going to be tomorrow, has been postponed until NEXT Sunday, February 4th (which is the day of my son’s “BIG-3-0” birthday), so I won’t have to do the cooking for that for a while. I can make the Chocolate Bar Cake (which he LOVES) ahead of time and put it in the freezer. My daughter thinks I should also make Broccoli Casserole (one of my son’s favorites, topped with “real” saltines), and REAL mashed potatoes (both of which I also love). My daughter is making Peppermint Bark and Sausage Balls, and my mother-in-law will probably make a 6-layer Caramel Cake, and some Butter Beans. BUT, my plan is to NOT eat any of the “regular” food at the party (EVEN the stuff I have to make!) but to bring my own meal so I can stay on track. I’m striving for a PERFECT run on the 90-Day LCHF Challenge (under 30 Net Carbs a day). I’ve read in others’ Journals that they have stood strong at work parties, family gatherings, etc., and it has inspired me to know I can do it, too. Of course, there IS that little voice in my head (satan’s voice, disguised to sound exactly like mine) that says, “it’s just one day – you can get right back on track tomorrow!” Get thee behind me Satan! The fact that the party is on a Sunday (the day before a weigh-in) is also a deterrent to going off-target. SO, here’s to a successful day of cooking, studying, reading, posting, and getting to better know the 12 precious members of my little Christian Community Group!
