What a great weekend I had! I'm feeling so much better after the cold I had, and I've had so much energy. A few of the cooking channels I follow on YouTube posted some great recipes, so I used one to make a new mini-cooking video: low carb no-bake cheesecake with an almond flour-cocoa crust. OMG, guys, they are AMAZING!!! You can see how I made them here: https://www.youtube.com/watch?v=JLjsQBP7d-I One of the guys I follow participated in a 10-channel collaboration for International chicken dishes, and I want to try all of them. One in particular sounded really good, and I happened to have all the ingredients on hand, so I made it for dinner last night, with appropriate alterations to ketofy it. It's called "Chicken Manhattan", and it was incredible! It was the first time I've tried using crushed pork rinds for breading, and I have to say, I think I like them better than breadcrumbs. My winter neighbor, who lives in an RV, brought over 2 boxes of Jiffy corn muffin mix and 2 eggs, and asked if I would bake them for her. LOL! She doesn't cook AT ALL, and claims the oven in the RV doesn't work right, so in exchange for doing the baking, she said I could keep one of the boxes for myself. Of course, they aren't on my diet, but I might make a mini version for a video. At any rate, I finally got to use a cool, old, cast iron corn stick pan I found at a thrift store. They came out beautiful, and looked like little ears of corn! The neighbor was duly impressed. It's back to work for me, today. Have a great week! ~Kes
