Happy Tater Talk Tuesday 🥔🥔

As I'm learning more about carbs in regards to hubby's best diabetic choices, (he really REALLY does love potatoes!) I was surprised to learn that HOW they are prepared can make such a difference. So, as long as I prepare it by steaming, boiling, baking or roasting AND he can limit his portions (yeah, good luck with that!) they can still be a part of our meals 😉

I still have lots of research to do about Glycemic Index/Glycemic Load of foods, but for now I'm happy that we CAN include one of his 'comfort' foods, as long as he's mindful😇

Have you looked into resistant starch? By cooking and completely cooling the potato, the starch is converted to a more resistant form. Really good for blood sugar regulation - so far as you’re careful about how you eat it!

I have made mashed potatoes with non-fat yogurt and half cauliflower. It's not exactly the same but better than no potatoes!

Allegra - you beat me to it! Cooking and cooling before eating is a great way to create resistant starch and slow absorption. Eating the skin also helps because of the added fiber. I saw recently where eating vinegar with your potatoes also helps with the glycemic load. Believe it or not, potatoes are pretty good with just vinegar and salt -- I mean, people like salt and vinegar potato chips, right?

Too high on the glycemic index for me to enjoy. Maybe every once in a great while treat. They almost immediately digests into sugar that quickly goes into the blood stream. I’m type 2 so it’s just not worth the high spike of insulin.

@writing I love cold potatoes with apple cider vinegar, salt, pepper, and dill!! Kinda like potato salad!

I had redskin potatoes with sweet peppers, onion, Everything bagel seasoning & just a bit of EVOO roasted in my iron skillet tonight.
