My birthday is later this week, and this year i feel like celebrating. That isn't always true. So i invited my bff and his dh over for dinner. Unlike the brunch i had for my friend, this menu is more me-centric, lol. I am making my childhood favorite birthday dinner, which is basically chicken rollatini. I associate it with special occasions because it is such a production to make. I have been sitting here making a list of what i can cook when, so that we can just have wine
and company that night. I plan to have whatever i want. Trying to have healthier options, or quantities of splurges that last one night only.

Here is my menu:
Chicken/mozzarella/mushroom rollups, breaded in panko
Hm mushroom marinara sauce
Hm marsala sauce
Spaghetti bar -- regular white spaghetti, green lentil spaghetti, zoodles, sauteed in garlic and evoo with parsley and parmesan cheese
Roasted french green beans with oo, lemon and sliced almonds
large mixed green salad
Hm garlic bread
Box of pinot noir to drink
Dessert -- three small bakery cakes -- flourless chocolate, carrot and vanilla cupcakes with vanilla frosting. (i really like cake!) Also have strawberries and blueberries and reddi wip.

Planning to make the sauces and assemble/bread the chicken early, also to fix the veggies and fruit.

Thank you, everyone! It is Thursday. @organicgirl, that's funny, i have only met two ppl irl with the same birthday. Seems a less common one! Ty for comments on menu. I will try to post pix! I have phone call w/my friend in the morning, and it looks like the weather may cooperate for a nice walk with the doggy before wine and cake... and that other stuff.
