All: Okay, I am back on the crepe wagon. Today, I knew I needed something sweet and I resisted going out and eating cookies, cake or nut rolls.Instead I made my crepes again. They look and taste great. I use steiva instead of sugar but I'm sure any sugar replacement would work. The batter is almond flour and egg. Probably most of carbs come from the banana. And, I make my own strawberry chia jam.And I whipped up the whipped cream too. The crepe recipe from sweetashoney.co (only four ingredients) - 4.6 carb The chia strawberry jam can found everywhere on the net , just search for it. A couple carbs per tablespoon. As you may know I am a bit of critic with alternative low carb foods with their tastes and mouth feel but this was YUM Perks

All: If you try, use a smaller non stick pan. I rub a little coconut oil with a paper towel on each try. And, pour less than a 1/4 cup and swirl in pan. You have to experiment. I kept putting in too much batter at first. And, don't be afraid to use your smooth spatula to repair holes or move uneven batter around. I wait until edges are brown and use my fingers to flip. The extra crepes will stay well in fridge too
