Perfect break-fast/lunch for me. Make ahead egg cups stored in the frig until ready to microwave and eat. One of these is bacon, green onion, cream cheese, about 2/3 whole egg and cheddar cheese on top. The other is bacon, tomato and pepper jack.

great idea! 2/3 eggs??

I beat up 8 or 10 (don't remember now), cooked and chopped up bacon, chopped up the other ingredients and built them in muffin cups. Filled the cups up to anout 2/3s and put the cheese on. Baked about 16 min @350°. Made 9. Totally not exact. Next time I'll keep bettet track and post it. I want to try sliced deli ham and break a whole egg in. Leave the centers slightly soft. The variations are endless.

I'm definitely going to try those. I'm so bad at pre-preparing. I usually grab something on the fly for breakfast or just a drink.

Great idea! I’ve seen recipes for them before but keep forgetting about them when it’s time for eggs. Those look great 👍🏻
