Turkey and rice stuffed red peppers.
Ingredients
Directions
- Chop then sauté onion in olive oil.
- Add garlic, cook until fragrant.
- Add minced turkey, break apart and let brown.
- Add chicken broth, diced tomatoes (with juice), Worcestershire sauce, and rice. Let simmer 20-25 minutes until rice is cooked, add water if needed.
- While rice is simmering, bring large pot of water to a boil. Cut tops of peppers and remove seeds. Boil peppers for 4-5 minutes then remove from water.
- Coat bottom of oven-safe bake dish with a layer of tomato sauce. Place peppers bottom side down in dish, fill peppers with rice and turkey mix.
- Top filled peppers with thin layer of tomato sauce. Add a pinch of shredded Parmesan to each if desired.
- Bake at 350F for 30 minutes.
