Calexico Middle Eastern Omelet

This recipe uses culture fusion to make a yummy omelet!

Ingredients

Directions

  1. Using a cheese grater, grate 1/4 of a red onion and pan fry on medium heat using cooking spray. Once brown and translucent remove to a plate.
  2. Place 4 egg whites in the same pan and fry into a circle. Flip once the top has almost set.
  3. Once the egg has been flipped place hummus, avocado, salsa and the fried red onions on to half the egg.
  4. Fold the other half over the stuffing and cook a few more minutes until egg has firmed. Flip if necessary. Remove to a plate and sprinkle with just a tad of non-fat cheese.

Very yummy. I use jalapeno cilantro hummus. A little spicy but good.
