Almond Pancakes

Low carb flourless almond pancakes.

Ingredients

Directions

  1. Separate egg whites from egg yolks, with whites in a big bowl and yolks in a small bowl.
  2. To the yolks, add and mix all the other ingredients.
  3. Whip the egg whites until soft peaks form.
  4. Fold the almond mixture into the egg whites. Do this gently because the fluffiness of the pancakes is from the whipped egg whites.
  5. Make pancakes using one large tablespoon of batter per pancake.
  6. Pan fry in oil or butter like regular pancakes.

substituted swerve for the sugar and added heavy cream for the liquid, tasty but a bit of a griyyy texture, but if you add enough sugar free syrup everything tastes good :)

I loved these but I changed the following - 1. instead of sugar I used Splenda. I don't think sugar would be wise. 2. I used coconut oil instead of heavier oils like vegetable oils. 3. My recipe did not call for butter so I left those out. I loved these pancakes! My roommate hated them but then again he's not the healthiest eater. It satisfied my craving for pancakes and with a sensible condiments such sugar free syrup and a decent butter substitute they were great.

There's great promise, in this recipe, but the first thing that caught my eye, as I read the list of ingredients, was these pancakes contain sugar. I'll add this recipe to my cookbook, but will not make them without, switching out the sugar, and using stevia in it's place; to make this truly low carb.

I used splenda in place of sugar. Made 12 small pancakes. Not awfull, but husband asked that I not make them any more, please. Lot of work to whip egg whites for such small, and not many pancakes!

The use of sugar instead of splenda is very questionable. Also 16 servings from one cup of almond flour?! Those aren't silver dollar pancakes those are nickel pancakes!
